Season pork with salt, pepper, and garlic powder. Place in the bottom of a 6 qt slow cooker and top with sauce mixture. Cook on high for 4 hours or low for 7-8 hours until tender.
Remove pork from the slow cooker and reserve 1 cup of sauce for serving.
Shred pork and stir into the remaining sauce. Place a generous portion of pork into the bottom of a small bowl or sundae dish. Add ¼ cup of coleslaw to each dish.
Top with a scoop of mashed potatoes. Drizzle with reserved sauce and a "cherry" tomato on top.
