How to Make Chili in the Slow Cooker

A slow cooker is a busy home chef’s lifesaver all year round! It’s no wonder it is one of the most requested items on bridal registries! Chili is one of the first ‘no-fail’ recipes a new user can make. Simply toss in the ingredients, set it to cook and walk away! Yes, it is that easy! In this recipe, I prefer to use whole canned tomatoes instead of diced. I find they add a better texture/thickness to the recipe.

I brown onion with the beef to make it tender and then sometimes add extra onion into the slow cooker. I do find the onion that is not browned doesn’t get as tender so if you like your onion tender, cook it along with the beef.

  • Brown ground beef with onion.
  • Wash & chop veggies
  • Put everything in the slow cooker and set and forget!

How to Thicken Chili in the Slow Cooker

To thicken chili, remove 1 cup of cooked vegetables with some liquid and puree in a blender. Add back to the crock pot for a nutritious blend that will fool even the pickiest eaters.

Can You Put Raw Meat in the Slow Cooker for Chili?

It’s easy to put raw meat in the slow cooker for chili but requires a little prep. For faster cooking, chop up a roast into smaller chunks and add to the rest of the ingredients. When cooking a whole piece of meat, like a shoulder or pork roast, sear the outside of it first in the slow cooker with some oil before adding the rest of the ingredients. This method cooks the outside, while keeping the juices inside making sure your finished product is extra juicy and flavorful!

If you’re using ground beef, it’s best to brown and drain it first.

You can easily make this chili recipe your own by mixing and matching veggies! Any combination of vegetables will do, whatever your family likes best! Slow Cooker Chili

Tender beef and beans in a delicious tomato sauce with veggies and seasonings.
Prep Time 20 minutes
Cook Time 4 hours
Total Time 4 hours 20 minutes

Ingredients  

  • 1 ½ lbs lean ground beef
  • 3 cloves garlic minced
  • 2 yellow onions diced
  • 2 cups chopped vegetables
  • 1 can tomato puree 28 oz
  • 1 can whole tomatoes with juice 28 oz
  • 2 cans red kidney beans 15 oz each
  • 1 tablespoon chili powder
  • 1 teaspoon dried basil
  • ½ teaspoon dried oregano
  • ½ teaspoon black pepper
  • Salt to taste

Instructions 

  • Crumble ground beef, minced garlic, 1 chopped onion, add seasonings.
  • While beef is browning, chop vegetables of your choice.
  • Add vegetables, tomato puree, tomatoes with juice, and kidney beans.
  • Set to high for 4 hours, low 6-8 hours. Season with salt and pepper and serve.
