For a more tender cut of meat, tenderize the boneless chops with a meat mallet. 

Make sure the chops reach an internal temperature of 145°F, followed by at least 3 minutes of rest time after removing from the oven. For best and safest results, use a meat thermometer to be sure you don’t over or undercook your pork chops.

Pork Chops with Mushroom Gravy

Tender pork chops in a creamy mushroom gravy are perfect served with potatoes.

Ingredients  

  • 4 pork chops
  • 2 eggs beaten
  • ½ cup all-purpose flour
  • 1 teaspoon salt
  • ¼ teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • olive oil
  • 1 onion
  • 12 ounces mushroom pieces drained, 2 cans
  • 20 ounces cream of mushroom soup 2 cans
  • 6 ounces evaporated milk

Instructions 

  • Beat eggs in a shallow tray.
  • Combine flour, salt, cayenne pepper and garlic powder on a plate.
  • Dip pork chops in egg and then flour mixture.
  • Heat 1 tablespoon olive oil in a skillet over medium heat. Brown pork chops on each side, about 2-3 minutes.
  • Place pork chops in a 9 x 13 baking dish.
  • Slice onions and layer on top of pork chops. Layer mushroom pieces on top of the pork chops and onions.
  • In a medium sized mixing bowl, mix together cream of mushroom soup and evaporated milk.
  • Once combined, pour cream of mushroom mixture over the top of pork chops.
  • Bake at 350°F for 40-50 minutes.

    1. Regular milk may curdle which is why we recommend evaporated milk. Even if it curdles, it’ll still taste delicious. Let us know how it turns out if you try it.

    Delicious! I doubled the recipe to make 8 pork chops (1/2 for us, 1/2 for the neighbors.) Didn’t quite need to double everything (especially egg, flour and definitely not the soup) but these pork chops were rich, creamy and a delicious hit with everyone! Served with mashed potatoes and peas. Will most definitely make again (maybe only one can of soup for 4.) 

  2. Could you do the same this but use pork tenderloin instead? I’ve been trying to find a recipe that roasts the tenderloin WITH the gravy, but have not found one yet. 

    1. Hi Kelsey, we have not tried this recipe with a pork tenderloin but would love to hear how it turns out for you! You will want to check the internal temperature of your tenderloin to make sure it reaches at least 145°F.

    1. Bone in makes for more tender pork chops. If they’re really thick, you may need to cook them a little longer to make them tender. Enjoy Robin!
