How To Make No Bake Cheesecake

This no bake cheesecake recipe requires very little hands-on work and really is so easy to make!

  1. Melt the chocolate chips in the microwave. Use short intervals in the microwave and stir often.
  2. Beat together remaining cheesecake ingredients (except the graham crust) until light and fluffy.
  3. Stir the melted chocolate into the cream cheese mixture and continue to beat for about 2 minutes.
  4. Fill each mini crust and chill till firm.

No-Bake Chocolate Cheesecake

This No-Bake Chocolate Cheesecake recipe is a simple and delicious chocolate dessert recipe that requires just 10 minutes of prep time!

Ingredients  

  • ½ cup semi-sweet chocolate chips
  • 8 ounces cream cheese softened
  • ¼ cup light brown sugar packed
  • ¼ cup granulated sugar
  • 1 tablespoon heavy cream*
  • ½ teaspoon vanilla extract
  • 8 mini graham cracker crusts

Instructions 

  • Melt the chocolate chips in a small bowl in the microwave on 30-second intervals, stirring between each one. Set aside.
  • In a large bowl with a hand mixer or in a stand mixer fitted with a whisk attachment, beat together the cream cheese, sugars, heavy cream, and vanilla on high for about 2 minutes.
  • Add in the melted chocolate and beat for another 2 minutes on high speed. 
  • Divide the cheesecake filling among 8 mini graham cracker crusts and chill in the fridge for 2 hours before serving. Top with whipped cream and chocolate sprinkles, if desired.

Notes

  • Milk may be used instead of heavy cream.
  • Recipe may be doubled for a large pie and should chill for 4 to 6 hours to ensure it sets before cutting.
