Instead of served a dip with chips, this recipe can be prepared as a condiment. Add some pizzazz to a simple chicken entree or try it with baked salmon, roasted ham or pork tenderloin.

Fruit – apples, kiwi, honeydew and pears are used in this recipe but any fresh ripe fruit or berry that is firm and sweet would be great. Some suggestions are pineapple, mango,  papaya, watermelon or peaches.

Rum – a touch of rum will give this salsa an extra taste of the tropical! But if you prefer an alcohol-free version, you can substitute rum extract in its place.

Lime – Fresh lemon juice and zest are good substitutes for lime if you are in a pinch.

Sugar – Honey could be used instead of sugar if you like.

Honey Lime Crisps – these are simple to prepare from scratch, but if you are tight on time you can use store bought lime flavored tortillas.

This Mojito Fruit Salsa with Honey Lime Crisps is so simple to make!

  1. Prepare the chips – Brush tortillas with butter mixture, cut into wedges and bake.
  2. Dice the fruit – Core apples and pears. Peel kiwi and melon. Dice everything into small bits. Combine dressing ingredients.
  3. Mix – Add dressing to fruit and mix until combined being careful to not mash the fruit.
  4. Refrigerate – Allow the flavors to blend for a couple of hours before serving.

Tips, Tricks and Storage Solutions

  • Lime juice is perfect to help prevent the apples and pears from browning but not for only about a day or so.
  • Store fruit salsa in a tightly covered container in your refrigerator.
  • When serving fruit salsa on a hot day, place it in a bowl filled with ice. This will keep it fresh, crisp and perfect for your guests.
  • Freeze this salsa ahead of time! Spread diced fruit on parchment paper, freeze fully, then transfer to a zippered bag. You can remove what you need, when you need it! Serve it before it has time to thaw because it may become mushy.

Mojito Fresh Fruit Salsa with Honey Lime Crisps

Ingredients  

Honey Lime Crisps

  • 8 flour tortillas 10"
  • 2 tablespoons melted butter
  • ½ lime juiced
  • 2 tablespoons honey

Mojito Fruit Salsa

  • 2 granny smith apples chopped
  • 2 pears chopped
  • 1 lime juiced & zested
  • 3 cups finely diced honeydew melon
  • 1 ½ cups diced kiwi about 5
  • 3-4 tablespoons chopped mint
  • 1 tablespoon sugar
  • 2 tablespoons rum optional

Instructions 

Honey Lime Crisps

  • Preheat oven to 350˚F. Combine butter, lime juice & honey and brush on tortillas.
  • Stack 4 tortillas at a time and using a pizza cutter, cut tortillas into 12 wedges. Place on a parchment lined baking sheet and bake 7-9 minutes or until crisp.

Mojito Fresh Fruit Salsa

  • Place apple & pear in a large bowl. Add juice from 1/2 lime and toss to combine.
  • Finely chop melon & kiwi and slice grapes. Gently combine all ingredients. Allow to sit at room temperature at least 15 minutes before serving.
