This loaded mashed potato casserole is an easy, comfort food dish that's a family favorite!

Ingredients  

  • 6 cups mashed potatoes
  • ¼ cup sour cream
  • ½ teaspoon garlic powder
  • 2 tablespoons butter softened
  • 6 slices bacon cooked and crumbled
  • 1 ½ cups cheddar cheese divided
  • 1 green onion thinly sliced
  • sour cream for garnish

Instructions 

  • Mix mashed potatoes, sour cream, green onion, garlic powder, butter, bacon and 1 cup of the cheese.
  • Spread into a greased 2QT baking dish and top with remaining cheese.
  • Bake at 350˚ for 25-30 minutes or until cheese is melted and potatoes are hot.
  • Garnish with sour cream if desired.
