This Crockpot Chicken and Stuffing recipe is one of my favorites, especially when it comes to getting dinner on the table and juggling a busy schedule. First of all, it is super easy to make! All you have to do is toss everything in the crockpot and let it slowly cook, no need to worry about anything else. 

Also, it is quite a flavorful dish that can feed a larger crowd. It is a whole meal put together in one scrumptious dish. Once you combine the chicken breasts with cream of chicken soup, canned veggies, and stuffing, you are certain to end up with a super flavorful and delicious meal.

In addition, you can also double the ingredients if you are hosting a bigger gathering. I usually use three chicken breasts, along with some broth and the rest of the ingredients. However, you can adjust the serving as needed.

How To Make Crockpot Chicken And Stuffing?

If you have used a crockpot before than you probably guessed that this recipe is quite easy to follow. 

  1. Start by spraying the crockpot with a non-stick spray.This is very important, otherwise, the stuffing may end up sticking to the pot.
  2. Season the chicken breasts and place them in the slow cooker. 
  3. Top the chicken with some stuffing mix, and then whisk together the broth and soup until fully blended. Add the mixture on top of the stuffing.
  4. Next, add your canned veggies.
  5. Put the lid on, and cook on HIGH for 4 hours or LOW for 7 HOURS. 

Can I Use Other Meats In this Crockpot Recipe?

While this recipe calls for chicken, you can certainly substitute it with other meats. A good alternative would be turkey breast but you can even use beef parts or pork, such as a pork loin. Let your tastebuds be your guide, or simply see what you have available in your fridge or freezer.

Depending on the meat you choose, you may decide on a different type of condensed soup in the recipe. Cream of celery or mushroom are always good alternatives. If you are not a fan of any condensed soup or if you do not have it on hand, you could use some plain sour cream mixed with chicken broth.

Can I Prepare Crockpot Chicken and Stuffing Ahead Of Time?

  • Absolutely! To make it in advance follow the recipe to the step up where you mix together the broth and soup.
  • Then, transfer the dish into a freezer-proof container, wrap tightly, and place in the freezer for up to 3 months.
  • When ready to serve, defrost and then place it in the slow cooker and cook on HIGH for 4 hours or LOW for 7 HOURS.
  • You can also prepare this crockpot chicken and stuffing casserole the day before and simply add the liquid when ready to cook. This definitely helps with meal planning and preparation!

Recipe Tips For Delicious Crockpot Chicken and Stuffing With Vegetables

  • You can use cream of chicken, celery, or mushroom soup. All three work perfectly well in this recipe, and taste equally delicious. 
  • In addition, you could use other chicken parts. For example, chicken tenderloins would work great here. The cooking time will be the same.
  • The ingredients can be adjusted based on servings required. As stated above, for a larger crowd you can double the ingredients. Alternatively, if you are cooking for just 2 people, reduce the ingredients by about half.
  • For a spicier kick, you can add some crushed red pepper flakes to the mix.
  • Serve this crockpot dish along side a fresh garden salad to up your veggie intake at dinner time!

Easy Crockpot Chicken and Stuffing is the ultimate comfort food dinner your whole family will enjoy.

Ingredients  

  • 3 medium chicken breasts boneless and skinless
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 tablespoon dried parsley flakes
  • ½ teaspoon salt
  • 1 10.75 oz can Cream of Chicken Condensed Soup
  • 2 cup chicken broth low sodium
  • 6 oz box stuffing
  • 2 15.5 oz can canned veggies green beans or peas and carrots

Instructions 

  • Spray crockpot generously with cooking spray.
  • Arrange the chicken breasts at the bottom and sprinkle on top: garlic powder, paprika, salt, and dried parsley.
  • In a large measuring cup or medium bowl, combine condensed soup and chicken broth until smooth.
  • Add the stuffing on top of the chicken breasts. Spray with some cooking oil and add the broth mixture on top, distributing it as evenly as possible. You can also mix it with the mixture.
  • Drain the canned veggies and arrange in an even layer on top of the stuffing.
  • Cover with lid and cook on low for 6-7 hours or on high for 3-4 hours.
  • Stir a few times during cooking.
  • Remove chicken to a plate, shred and serve on top of the stuffing.
