Chicken strips are baked in a creamy cheese sauce with mushrooms that goes from the oven to the table in minutes!

Ingredients and Variations

This cream of chicken casserole recipe is a fast, family favorite made with simple, budget friendly ingredients likely already in the kitchen!

Chicken – Use precut thawed chicken strips or cut boneless, skinless chicken breasts or thighs into strips or chunks.

Mushrooms – This dish is loaded with mushrooms, so timesaving canned mushrooms that are pre-sliced are perfect in this recipe. You can add 1½ pounds of fresh mushrooms as well (see recipe below).

Soup – No need to by Campbell’s if a store brand of cream of mushroom soup is available! You can also use cream of chicken, cream of broccoli, or cream of celery soup. For a thicker sauce, use heavy cream instead of milk, if desired.

Variations – Sneak in some spinach, shredded zucchini or a frozen vegetable medley and the kids won’t even notice! Add some ham and provolone to make a quick chicken cordon bleu casserole, or add broccoli to create a broccoli chicken curry casserole.

How to make Chicken Mushroom Casserole

Tender pieces of chicken are cooked in a savory mushroom sauce!

  1. Brown seasoned chicken strips in oil and place them in a casserole dish, as described in the recipe below.
  2. Cook onion in oil until soft. Stir in cream cheese until melted.
  3. Whisk in soup, milk, garlic powder, and mushrooms.
  4. Pour sauce over chicken, cover, and bake until chicken is cooked through and sauce is bubbly.

Serving Chicken Mushroom Casserole

  • Serve chicken mushroom casserole over mashed potatoes, egg noodles, pasta, or rice. Or try it over sautéed spinach for a low-carb dish.
  • Balance the richness with a veggie side. Try butternut squash, asparagus, or zucchini.

Leftovers

Keep leftover creamy chicken mushroom casserole in a covered container in the refrigerator for up to 4 days.

Reheat on the stove top with a little milk to loosen the sauce.

Creamy Chicken Mushroom Casserole

This creamy chicken mushroom casserole is easy to make for a hearty and delicious entree.

Ingredients  

  • 2 pounds chicken breast strips
  • salt and pepper to taste
  • tablespoons olive oil divided, more as needed
  • 4 ounces cream cheese cubed
  • ½ cup frozen chopped onion*
  • 1 cup milk
  • ½ teaspoon garlic powder
  • 1 can condensed cream of mushroom soup 15 ounces
  • 24 ounces canned sliced mushrooms 3 cans*

Instructions 

  • Preheat oven to 350℉.
  • Season chicken strips with salt and pepper.
  • In a large skillet, heat 1 tablespoon olive oil over medium-high heat. Add chicken strips, making sure not to overcrowd the pan. You may need to cook in batches, adding more oil as needed.
  • Brown chicken, turning after 2-3 minutes on each side. Remove from pan and place in a 9×13″ casserole dish.
  • Using the same skillet, heat ½ tablespoon olive oil. Add onions and cook over medium heat until soft. Add cream cheese and stir until melted.
  • To the cream cheese, whisk in condensed soup, milk and garlic powder. Stir in drained mushrooms. Season with additional salt or pepper to taste.
  • Pour sauce over chicken. Cover with foil and bake for 35-45 minutes or until chicken is cooked through and sauce is bubbly.
  • Serve alone, or over rice or egg noodles.

Notes

*Replace frozen onion with one small diced onion.
To use fresh mushrooms in place of canned mushrooms:
  • Heat 1 tablespoon of oil in a large skillet over medium heat. Add 1 1/2 pounds of sliced fresh mushrooms in a single layer. Cook for 3-5 minutes without stirring until browned. Toss, and cook for an additional 3-5 minutes.
