Coconut Macaroon Recipe

  • The flavors of chocolate and coconut combine together in perfect unison. 
  • These cookies are so easy to make and require just a few simple ingredients – condensed milk, flour, coconut, and chocolate.
  • The sweetness comes from the sweetened condensed milk as well as the sweetened coconut flakes. There is no added sugar in this recipe.

What is a Coconut Macaroon?

Don’t mix up the MACAROON with a MACARON. They are entirely different delightful deserts.

  • MACAROONS, like this cookie recipe, are usually made with coconut bonded together with egg whites, then dipped in chocolate. In this coconut macaroon recipe, there are no eggs, just condensed milk which acts as a binder with the flour. 
  • MACARON on the other hand, is a light and airy, usually colorful, meringue sandwich with fillings such as jam, buttercream or ganache.

Recipe Ingredients 

COCONUT: There are many different types of coconut sold on the supermarket shelf from unsweetened to sweetened coconut. This recipe specifically calls for sweetened coconut so be sure to pick up the right one!

CONDENSED MILK: This can be found in the canned milk section or baking section of the supermarket. Make sure to purchase the canned milk that has been sweetened.

How to make Coconut Macaroons

Simple steps to a yummy dessert:

  1. Mix flour, salt, coconut in a bowl.
  2. Add sweetened condensed milk, and vanilla.
  3. Divide into 15 pieces. Press or shape in a 2″ circles.
  4. Bake. (As per recipe below)
  5. Melt chocolate. Dip cooked macaroons in melted chocolate

Recipe Tips & Tricks!

If the macaroons spread too much while cooking, place the batter in the refrigerator for 20 minutes. Also, do not overmix the batter.

Like most cookie recipes, it is important to not over bake them. Baking for just the right amount of time will ensure that the cookies are moist and chewy.

Chocolate Dipped Coconut Macaroon Cookies

Make these easy Coconut Macaroon Cookies dipped in chocolate for a quick, delicious and portable dessert that everyone will love!

Cook Time 10 minutes

Ingredients  

  • cup all-purpose flour
  • 2 ¾ cups sweetened flaked coconut
  • 7 ounces sweetened condensed milk
  • ½ teaspoon vanilla extract
  • pinch of salt
  • ¼ cup milk chocolate

Instructions 

  • Preheat oven to 350°F.
  • Combine flour, coconut and salt in a bowl. Add sweetened condensed milk and vanilla. Mix well.
  • Divide into 15 pieces. With wet hands, shape each piece into a 2" circle.
  • Place on a parchment-lined pan and bake 10-12 minutes or until lightly browned. Once baked, remove from oven and let cool.
  • In a small bowl, microwave chocolate for 30 seconds, remove, and stir. Repeat until chocolate is melted.
  • Dip the bottom of each macaroon into the melted chocolate and set it back on the parchment-lined baking tray to cool.
