I love to serve casseroles when the weather turns colder and our schedule is even busier than ever! Not only are potato casseroles perfect, comforting recipes but they are so easy to prepare ahead of time. This makes for simple weeknight dinners that are ready and waiting to pop in the oven.

How to Make Potato Casserole

  1. Cook potatoes, then mash with cream cheese and sour cream.
  2. Cook bacon till crisp. Soften broccoli slightly.
  3. Combine the potatoes, bacon, cheese and broccoli and turn into a casserole dish.
  4. Bake! Simple and easy!

This cheesy potato casserole is a great way to use up leftover mashed potatoes! And it makes prep for this dish even easier! I often make a very large batch of mashed potatoes with the thought of using the leftovers in a casserole such as this later on.

You can store your mashed potatoes in a zip top bag and freeze if you don’t plan to use them up right away. Be sure to thaw completely before using in your recipe.

How Do You Freeze A Casserole And Reheat It?

One of the great things about potato casseroles is that you can make them ahead of time and freeze them! Here are a few tips for frozen casserole success!

  • Cool the mashed potato casserole completely before placing in the freezer. This will eliminate the casserole from holding unwanted moisture.
  • It is a good idea to defrost casseroles in the refrigerator before baking. If it is completely thawed, you will be able to bake as normal.
  • If you have to go directly from freezer to oven, bake at 350˚F and cover for the first while to ensure it does not dry out. Because it is frozen solid, it is going to take much longer to warm through, so you need to leave enough cooking time. This frozen potato casserole will take about 2 hours to warm completely through. You will want to remove the cover for the last 30 minutes of cook time.

Out of the many loaded potato casserole recipes I have tried, this one is definitely a winner! The flavors of a twice baked potato like garlic, cream cheese, sour cream and bacon, are combined with the goodness of broccoli, to make a comforting side dish that makes you feel snug, warm and satisfied this cool fall season or winter!

Cheesy Broccoli Potato Casserole

Cheesy Broccoli Potato Casserole is made with mashed potatoes, bacon, broccoli and 3 types of cheese create a cheesy potato bake like no other

Ingredients  

  • 3 large baking potatoes
  • 2 cloves garlic
  • 8 slices bacon
  • ¼ cup sour cream
  • ¼ cup milk or as needed
  • 3 oz cream cheese softened
  • 2 Tablespoons butter
  • ½ teaspoon onion powder
  • salt & pepper to taste
  • 1 ½ cups sharp Cheddar cheese divided
  • ¼ cup parmesan cheese shredded
  • 3 cups broccoli cut into bite sized pieces

Instructions 

  • Preheat oven to 375°F.
  • Peel potatoes and cut into large chunks. Place potatoes in a large pot of boiling water along with garlic cloves. Boil for 13-15 minutes or until tender. Drain well.
  • Cook bacon until crisp. Set aside.
  • Place broccoli in a microwavable bowl, add 1 cup of water. Cover with plastic wrap and microwave 3 minutes or until tender crisp. Drain well. (Or steam broccoli on the stove if you prefer).
  • In a large bowl, combine potatoes, cream cheese, sour cream, butter, milk and onion powder. Mash with a potato masher. Stir in bacon, broccoli, cheddar cheese and parmesan cheese.
  • Spread into a casserole dish and top with remaining cheese. Bake 20-25 minutes or until heated through and cheese is bubbly.
