Not many sandwiches can compare to this easy chicken salad! It’s super simple to make and perfect layered on a bed of field greens or loaded onto hearty ciabatta bread. We took a rotisserie chicken and made a restaurant-quality salad that is homemade, cost-effective, and absolutely delish!

Easy Chicken Salad

Rotisserie chicken takes all the work out of this easy chicken salad! Chicken salad is a healthy alternative to other processed lunch meats, and with a little mayo, some Dijon mustard, some colorful tomatoes, and crunchy arugula, this hearty sandwich is definitely up-leveled and perfect for any appetite!

Chicken salad ideas are plentiful, but we offer our fellow home cooks variations that are definitely outside the recipe box!

Even though this basic recipe stands alone, we encourage you to try other mix-ins like chopped celery, shredded carrots, diced black olives, and even crunchy iceberg lettuce, spinach leaves, or undressed, packaged coleslaw mix for extra crunch!

How To Make A Chicken Salad Sandwich

A tasty sandwich like this one shouldn’t be so simple to make…but it is! 

  1. Combine everything except the arugula in a bowl and season.
  2. Toast the ciabatta bread as desired. 
  3. Place arugula on one side of toasted ciabatta bread and scoop BLT chicken salad on top.
  4. Add a slice of cheese (optional provolone or swiss) and top with the other toasted half of ciabatta bread.

PRO TIP: For an open-faced toasted sandwich, scoop filling on top of one half of ciabatta bread, cover with a slice of cheese, and place under the broiler until the cheese is melted and bubbly about 3 minutes.

PRO TIP: Rub a clove of garlic over the toasted ciabatta for a savory, gourmet touch!

Easy Chicken Salad Tricks and Tips

    • BLT chicken salad will keep in the fridge for about 4 days as long as it’s covered.
    • Serve it again on top of a bed of mixed greens, or tucked into a pita pocket or a wrap for a quick lunch on the go!
  • BLT chicken salad can be frozen in a labeled zippered bag. It will last for about two weeks. After it’s thawed add a little extra Dijon and some fresh bacon bits to freshen it up and it will be ready to serve again!

BLT Rotisserie Chicken Salad Sandwich

Tender chicken, juicy tomatoes and crisp smoky bacon make the perfect sandwich!

Ingredients  

  • 2 cups rotisserie chicken shredded
  • ½ cup mayonnaise
  • 2 teaspoons dijon mustard or grainy mustard
  • 1 green onion thinly sliced
  • ½ cup bacon cooked and crumbled
  • 1 cup cherry tomatoes diced
  • 1 cup arugula or lettuce
  • 6 ciabatta buns

Instructions 

  • Combine the shredded chicken, mayo, dijon, tomatoes, crumbled bacon, and green onion.
  • Mix all ingredients until fully incorporated.
  • Season with salt and pepper to taste.
  • Toast the ciabatta bread to your desired doneness.
  • Serve on the toasted bread and garnish with arugula and shredded cheese if desired.
