Ingredients  

  • 12 ounces rotini pasta cooked and drained
  • ½ pounds bacon cooked and crumbled
  • 1 cup cheddar cheese shredded
  • 2 green onions sliced
  • 1 cup cherry tomatoes

Dressing

Instructions 

  • Place drained pasta into a large bowl. Add bacon, cheddar, green onions and tomatoes.
  • Mix dressing ingredients and pour over ingredients in the large bowl.
  • Mix until fully combined. Refrigerate until ready to serve.

Notes

  • Cook pasta ‘al dente’, drain and rinse with cold water, or add it to an ice bath, to stop the cooking process and keep the pasta extra firm.
  • Refrigerate leftovers covered in the refrigerator for up to 4 days.
  • If serving outside in the heat of the day, or even room temperature, place serving bowl over a second bowl with ice in it to keep salad cool. Stir frequently.
