I’ve always loved meatloaf, hot or cold, in a sandwich, leftover… pretty much any which way! My mom always made a traditional meatloaf with onion and bread crumbs and topped it with a ketchup chili sauce topping. It’s the same meatloaf recipe I’ve been making for my family forever.
Forever until I found this StoveTop Stuffing Meatloaf recipe and….now I it’s our new go to. This recipe starts a base of stove top stuffing which already loaded with spices, seasonings and onion so it replaces the regular bread crumbs and onions. Lean ground beef is then mixed in and it is baked until no pink remains. Cooking this in a bundt pan reduces the cooking time compared to a typical loaf style meatloaf (and gives a yummy crisp exterior). You’ll want to ensure you spray your bundt pan really well to keep the meatloaf from sticking.
Once cooked, we fill this delicious meatloaf with mashed potatoes and top the whole thing with gravy. Add a side of green beans or a tossed salad and you’ve got a meal that your entire family is going to love!
- 1 package of Stove Top stuffing any flavor
- 1 cup of hot water
- 2 packages brown gravy mix divided use
- 1.5 lbs ground beef
- 1 cup cold water
- 2 large eggs beaten
In a medium sized bowl add stuffing mix and 1 cup of hot water and let sit 5 minutes.
In a separate bowl, combine 1 package of brown gravy mix with 1 cup cold water. Add in ground beef and egg and mix.
After the stuffing has sat for 5 minutes, incorporate the stuffing mix into the ground beef mixture.
Grease a bundt pan with non stick spray and then press the ground beef mixture into the pan. Bake at 350 degrees for 45-55 minutes or until no longer pink inside
Once baked, rest for 5 minutes while preparing the second package of gravy and then invert onto a plate.
Serve with mashed potatoes and brown gravy in the center of the meatloaf.
