Loaded Hasselback Potatoes recipe

Ingredients

  • 4 large Russet potatoes, washed
  • 8 tablespoons unsalted butter, thinly sliced
  • 8 ounces of your favorite cheese
  • 1/2 lb of bacon cooked, crumbled
  • kosher salt
  • fresh ground black pepper
  • olive oil
  • sour cream

Instructions

  1. Preheat oven to 400 degrees.
  2. Place a potato on a cutting board.
  3. Thinly slice potato (about 3/4 of the way through).
  4. Drizzle potatoes with olive oil.
  5. Place a small pat of butter in every other slice.
  6. Salt and pepper each potato.
  7. Bake for about 50 minutes.
  8. Place a slice of cheese in leftover slices.
  9. Return potatoes to the oven and bake until cheese is thoroughly melted (about 5-10 minutes)
  10. Top with sour cream and bacon crumbles.

Ingredients

  • 1 lb. ground beef
  • 1 pkg. taco seasoning mix
  • 1/2 cup water
  • 1 can crescent roll dough
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 3 cups crushed corn chips
  • 1/4 cup salsa
  • 1/2 stick melted butter

Instructions

  1. Cook ground beef.
  2. Drain and return to the pan.
  3. Add the taco seasoning mix and water.
  4. Simmer until water has boiled off (around 5 minutes)
  5. Separate the crescent dough into triangles
  6. Spray a 9" pie dish with nonstick cooking spray
  7. Press triangles into pie dish with the points toward the center of the dish.
  8. Press seams together to seal
  9. Sprinkle 1 - 1/2 cups of the crushed corn chips onto the crescent crust.
  10. Spoon ground beef over the top of the corn chips, spreading evenly.
  11. Mix sour cream with salsa.
  12. Spread sour cream mixture over meat.
  13. Cover with the shredded cheese
  14. Top with remaining crushed corn chips.
  15. Top corn chips with melted butter.
  16. Bake at 400 degrees until the crust is golden brown (about 20 minutes)

Ingredients

  • 1 loaf french or italian bread, sliced in half lengthwise
  • (2) 8 oz blocks of cream cheese, softened
  • 1 1/2 cups pickled jalapeno slices, diced
  • Extra jalapeno slices for topping, as desired

Instructions

  1. Preheat the oven to 400 degrees.
  2. In a medium sized mixing bowl, add the cream cheese and diced jalapenos.
  3. Mix together until blended.
  4. Spread the cream cheese mixture over the cut side of the bread.
  5. Top with extra jalapeno as desired.
  6. Bake uncovered for 15 minutes or until golden and bubbly
  7. Remove from the oven and slice.

Ingredients

  • 2 cups cold mashed potatoes
  • 1 egg, lightly beaten
  • 4 oz block cheddar cheese, cubed
  • 1/8 cup sour cream
  • 1/2 cup chopped green onions
  • 1/2 lb bacon cooked, crumbled

Instructions

  1. Mix mashed potatoes, sour cream, green onion, and 1/4 cup of the bacon crumbles.
  2. Shape mashed potatoes into 1 in. balls.
  3. Put a cube of cheese into the potato ball and mash potatoes around it until cheese is completely covered.
  4. Dip them into the eggs, then dredge in the bacon bits.
  5. Place onto cookie sheet or baking dish.
  6. Bake at 350 degrees for 15- 20 mins or until cheese is oozing out.

They can be topped with sour cream, extra bacon bits, sauted veggies, ketchup, sausage and eggs, basically anything you might have handy!

Loaded Mashed Potato Pancakes recipe

Ingredients

  • 2 cups cold mashed potatoes
  • 1 cup shredded cheese (such as cheddar)
  • 1/2 cup flour
  • 6 strips bacon
  • 1 medium onion, chopped
  • 2 eggs
  • 2 tbsp fresh basil, chopped
  • 2 tbsp fresh parsley, chopped
  • 2 cloves garlic, chopped
  • 1 tsp salt
  • 1/2 tsp pepper
  • 4 tbsp butter or margarine

Instructions

  1. In a large non-stick or ceramic frying pan, fry the bacon until crispy. Place on a paper towel to drain until cool, then crumble into small bits. Place the bacon bits into a large bowl.
  2. Pour off all but 2 tbsp of bacon grease from the frying pan. Over medium heat, stir-fry the garlic and onion until soft and translucent. Add them to the bacon bits in the large bowl.
  3. To the bacon and onion mixture, add the rest of the ingredients, except for the butter or margarine. Blend well with a spoon or your hands (it'll be sticky).
  4. Wash and dry your frying pan, then melt 1 tbsp of butter or margarine in it over medium heat.
  5. Scoop up about 1/4 of a cup of the potato mixture and form it into a ball. Place it in the hot pan, flattening it out until it's about 1/2 to 3/4 of an inch thick. Fry for about 3 minutes on each side, until they are lightly golden brown.
  6. Keep warm until ready to serve. For best results, serve immediately, while still crispy.
